Cacao Fruit Bahia Mojito

Inspired by a rare Mojito we tried on a trip to Bahia and a recipe we were so fortunate to get from an anonymous barman - this one is dedicated for the amazing discovery of adding fresh Cacao Fruit to rum and mint. Perfection!

Ingredients

  • 6-7 mint leaves

  • Half a lime

  • 1 sugar cube

  • Splash of lime juice

  • 1 oz simple syrup

  • 2 oz Bacardi or preferred Rum

  • 1 oz Cacao Fruit Smoothie

  • 1 cup ice

  • splash of soda

Directions

1. In a cocktail shaker combine the mint, half lime, sugar cube, a splash of lime juice and simple syrup.
Mash together.

2. Add the Rum, Cacao Fruit Smoothie and shake well with the ice.

3. Pour into a glass 3/4 of the way, leaving some space for the soda.

4. Add a splash of soda and enjoy.

This cocktail came to me with one idea: decadence. The Demerara River in Guyana produces some of the best sugar and rum in the world. Here, I've featured one of my favorite spirits: El Dorado 12, a dark rich rum from Guyana. This luxurious 12 year old rum tastes amazing on its own, but also creates a wonderful foundation for a blended drink. Equal parts of house made dark chocolate, Vanille de Madagascar, Demerara rich simple syrup, and El Dorado 12 creates a happy accident that stands on its own as near perfection.
