MARSHMALLOW FOAM ON A CRUNCHY BISCUIT.
A Central European classic that should have definitely been an American icon. Sort of an upgraded marshmallow foam mixed with natural flavors such as vanilla bean, 70% ganache, strawberry or lime zest, piped on different crunchy bases and hiding a layer of cream or toffee. It is then covered with warm, pure melted chocolate and a choice of crushed candies, roasted nibs or salted hazelnuts. I was inspired to add those Krembos by Shay Golan that for me is the best “Krembo Chef” in the world!
